How does writing a simple opening page turn into three completely different novels?

Turns out with a good page come a flood of ideas.  First the original intent of a gambler looking for his dad while being hunted by an assassin and large time boss with a grudge.

The second came about because despite taking the gambler in a new direction I still liked the opening.  So on comes the freighter captain in love with the bartender while looking for a contract.

The third appeared because I changed the opening to suit the freighter captain but still had the original so on came the idea to make the story about an outlaw fresh off a train robbery who is looking to offload his prize but ends up getting into a mess of trouble while being tracked by Lecroix.
